Orange Cake {Vegan}

What you'll need

2 oranges, peeled and cut up

175 g dairy free margarine, I use nuttelex
1 cup of caster sugar
2 cups of SR flour

Lemon icing
1 1/4 cups icing sugar
3 tbs of lemon juice
1 tsp of grated orange rind

Place peeled oranges in food processor, and blend until broken up.
Add margarine and sugar, blend again.
Add flour and blend until well combined.
Place in greased cake tin
Cook at 180˚ for 45-55min.
Place on wire rack to cool.
When cool, ice with lemon icing
sprinkle with the orange rind (optional)

I love this cake, I make it all the time. So easy, so good.

Fried rice. Nut, egg and dairy free.


Fried Rice
5 tbsp of olive oil
2 cups of rice
3 spring onions
1 brown onion
1 cup of mixed peas, corn and carrots, I use frozen
6 slices of bacon, check it doesn't contain any allergens
1/2 a red capsicum
1 tsp finely chopped garlic
soy sauce to taste
3 tsp parsley
2 tsp chicken stock, check for allergens.

Place 2 cups of rice with 4 cups of warm water into a microwave safe dish, microwave uncovered for 12 minutes on until cooked, leave rice to sit and absorb all water. I normally cook the rice a couple of hours before hand and leave it to dry out.

Using an electric frying pan or wok fry the bacon and brown onion along with a dash of olive oil on a med-high heat, until onion is browned and bacon cooked.

Add capsicum, spring onion and pre steamed (if using frozen) carrot, peas and corn cook for another 3 minutes.

Turn the heat to high, add the rice, garlic and more olive oil using a wooden spoon break up the rice constantly stirring for about 5 minutes.
Add parsley, chicken stock and soy sauce to taste.
Enjoy.
