Vegan Peanut Butter Cookies


Last week Charlie passed a hospital challenge for peanuts, Harper outgrew his peanut allergy almost a year ago, after he passed I introduced peanuts to Charlie only to find she had a reaction. So this week we are celebrating being a peanut full home. Don't be fooled these biscuits are anything but healthy, but they're good, so good. 

CHERWY PEANUT BUTTER COOKIES
Serves 24 cookies
1/2 cup dairy free butter, we use nuttelex
1 cup crunchy peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon of Orgran egg replacer mixed with 3 tsp of water
1 tablespoon vanilla essence
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 and 1/2 cups flour
Preheat oven to 180°. In a large mixing bowl, cream together dairy free butter and peanut butter. Add sugars and continue to beat for 2 minutes.
Add egg replacer, vanilla, baking soda, baking powder, and salt, continuing to mix. Slowly incorporate flour, continuing to beat until a fluffy dough forms. Shape dough into 1 1/2 inch balls. Slightly flatten with the back of a fork and arrange on a lined baking sheet, with cookies 2 inches apart from one another.
Bake for 9-10 minutes.
