EGG FREE, DAIRY FREE, NUT FREE, WHEAT FREE Chicken Sausage Rolls

Perfect sausage rolls that aren't that bad for you, but taste like they are.

What you'll need.

500 g Free Range Chicken Mince
Pampers Reduced Fat Puff Pastry or Gluten Free Puff Pastry
1 Brown Onion
1/2 Zucchini
1 Carrot
1 tsp Crushed Garlic
2 tbs Tomato Sauce
1 tbs Mixed Herbs
1 1/2 tsp Organ Egg Replacer
Soy Milk, for brushing
Sesame Seeds

Preheat oven to 180°. Layout pastry to defrost.
Place onion, carrot, and zucchini into a food processor and chop until fine.
In a large bowl mix, chicken mince, veggie mix, garlic, tomato sauce, mixed herbs and egg replacer. Use your hands to make sure it's mixed really well, I also added some pepper. You can add more herbs or garlic according to your taste.
Lay out a sheet of puff pastry and cut it in half, place meat mixture in a roll down the middle, roll together using soy milk to bind. Brush the roll all over with soy milk and sprinkle with sesame seeds. Cut into bite size rolls.
Bake until cooked and brown, these took 45 minuets in a very old oven.
Serve with sauce.

Dairy free, Egg free, Scalloped potatoes (vegan option)

These scalloped potatoes are so good. I have no worries serving them up to dairy eater. In fact I'd go as far as to say you couldn't even tell weren't made with dairy. And for the vegans out there just admit the bacon, simple.

What you'll need.

2kg Desiree Potatoes
6 Spring onions, thinly sliced
6 slices Bacon, cubed (optional)
1 tub Tofutti better than sour cream
1/2 tsp Crushed Garlic
1 pinch Salt & Pepper

Preheat oven to 180˚C.
Peel potatoes and slice thinly keeping all potato slices a similar thickness.
Slice spring onions.
Cut bacon into 1 cm cubes.
Add salt, pepper, and garlic to "sour cream" whisk with a fork to combine.
Arrange a layer of potatoes over the base of a large ovenproof dish. Top with spring onions, and bacon. Drizzle with a little cream mixture. Repeat layers until all ingredients have been used.

Bake for around 2 hours, or until potatoes are just tender. If the top is not brown and crunchy by this stage, turn the oven up and bake until top is browned.

That's it, super easy, and so good!

Tuna pasta {Egg free, dairy free}

Tuna has been Harpers favourite food as long as I can remember. He eats it in everything. This pasta is delicious and one of his favourite meals.

Ingredients:
olive oil
1 tsp cinnamon
1 bunch of fresh basil
X2 400g tins of good quality whole tomatoes
700g or more, of good quality tuna (in oil)
one red onion, cut finely
1 Pinch of crushed hot chilli
500g penne (egg free, if needed)
Zest and juice of one lemon
Salt and pepper

Chop the basil stalks, you want to pick the leaves and set them aside for later. Next chop the red onion. I cut both really fine.
Heat a splash of oil, and gently fry the onion, basil stalks, crushed chilli and cinnamon. You want to use a medium heat for about 5 minutes, or until the onion is soft and sweet.
Turn heat to med/high and add your tomatoes, break the tomatoes up with the back of your spoon, then add tuna. Add salt and pepper and let simmer for about 20 minuets.
While the tomato mixture is cooking you want to get you pasta cooked. For me it works best with a really big pot full of water, add salt and bring to boil. I don't add oil but do make sure I give it a stir every couple of minuets until its cooked.
Once the pasta is cooked I drain it, and mix it with the tomato sauce, lemon juice and lemon zest. Then I test the seasoning, sometimes I like to add two lemons instead of the one I used here. Also I add more salt or chilli now (if needed)
Tear up the basil leaves you set aside earlier and your done. Enjoy.
