The answer to all your problems & The best chocolate cake ever. {VEGAN}

When all else fails cook. 

No, no, no! He screamed, as he thew a plastic doll full pelt at the very little dog. It was the final straw, it had been a long day for this very tired mummy, she was struggling to get her baby to sleep, and had been bullied by a two year old all day, she couldn't take anymore. So she sat down on her kitchen floor and cried. This went on for a few minutes before the bully said sorry, and the mummy felt bad for letting him see her cry.

All of a sudden a thought popped into the mummys head, the answer to all her problems had been there all along, she had just been to overwhelmed to see it.
She got up off the kitchen floor and put the kitchen to use, she stopped trying to get the baby to sleep and put her in the swing, she swooped up the bully and hugged him. She whispered in his ear, lets bake a cake. a chocolate cake. A big smile formed across his face and he squealed with excitement.

And from that moment, the day got better.


One 450g can of drained beetroot (you won't taste it)
1 1/2 cups Caster sugar
2 cups of plain flour
1 1/2 teaspoons of bicarb soda
2 teaspoons of orgran egg replacer
5 tablespoons of coco powder
1 cop of vegetable oil
1 teaspoon of vanilla extract

Use a food processor to puree the beetroot. Add all ingredients to a bowl, mix well.
Bake in a pre greased cake tin, for about 55 mins at 180°.

This is hands down, the best chocolate cake I have ever eaten! Even without eggs and dairy, this cake wins. People love it whenever I cook this cake.
Each day after its made it gets heaver, more like a mud cake. Sometimes when I make it, I use a higher oven temperature about 200° it makes the edges crunchy and chewy. Yum.
Also in the photo you might notice the cake looks crumbly, thats only because we ate it hot warm, straight out of the oven with soy ice cream, like pudding. If you allow the cake to cool the texture is like a cake.

Want to change it to a Jaffa cake? Add half a orange with the beetroot. Enjoy.
